Joanna loved to bake and had two signature dishes - cheesecake and sticky toffee pudding. the cheesecake receipe is from school which Joanna made in Year 8 and we made it often because it is so easy to make and delicious. Here is the recipe: -

Base:
75g butter
150g finely crushed digestive biscuits

Topping;
250g cream cheese (we use Aldi)
Juice of 1 lemon
250ml double cream
2-4 tablespoons of icing sugar

Method:
Melt butter and add crushed biscuits, mix well and spread in base of tin.
Mix cream cheese with the icing sugar. Slowly add juice and cream.
Spread over the base and chill.
